As summer is winding down, there still remains – loads and loads of summer squash. Unfortunately, I did not have time for a garden this year; but, thankfully I have fabulous neighbors and family that have amazing gardens. I haven’t had to buy squash in forever. Plus, I LOVE summer squash. Like I could eat it every day grilled with just a touch of truffle oil & pepper. But the hubs needs a little more variety with his squash. So… Pinterest to the rescue. :) I searched for some fun recipes to use up the delicious summer squash that has been gracing my fridge these days. The key to this recipe is – use that summer squash that is straight from the garden. So, HUGE thank you to everyone who has given me squash this summer. You’re my favorite.

I happen to be one of those people who are not so good at following recipes. Inevitably, I will think something else sounds like it would be a good mix with what they already have, or forget to purchase some ingredient and just improvise. ย This time, I did follow the recipe fairly closely. These are the few changes I made:
1. I skipped the honey. I wanted it to be more savory than sweet.
2. I used ground thyme & garlic because I didn’t have any fresh versions laying around.
3. I added some purple onion. Because it’s pretty with the yellow & green.
4. I put fresh tomatoes on Garett’s portion. Because we also have LOTS of fresh ones of those from our neighbor’s garden. I just forgot to take a pictures with those nasty things on the galette.
5. I used my mom’s tasty pie recipe instead of the one on the blog. You know, because I had some left over from my attempts at peach pie.
Other than that – just the way she made it on her Zucchini, Squash & Ricotta Galette Recipe.
Anyone else found great recipes for their summer squash? There are so many on Pinterest its hard to know which ones are the tastiest.
