Peach Pie. The essence of summer. I especially love going to Salt Lake’s Saturday morning Farmer’s Market and finding tree-ripe peaches. The kind that are so juicy you have to eat them in your backyard. Summer time peaches. And what better way to enjoy this fruit of summer, than in the perfect peach pie? Only problem, I can seem to find that perfect pie filling recipe. Now, I make a pretty mean pie crust, but for some reason, the peach filling has me stumped.
The juiciness of summer peaches makes it more of a soup than a pie. So I add flour, and it tastes like flour. So I add a bit of almond flavor, and it tastes like almonds. When I talk the perfect peach pie, I’m looking for something that tastes like those fresh summer peaches, only surrounded by a flaky crust and possibly accompanied with a little vanilla ice cream, just for good measure. So, one day I thought, hey, this looks like a pretty good recipe. I’ll give it a try (I had already tried this one, without much luck there either… although I did follow that recipe a little closer.)ย But, true to my normal recipe “following” ways, I didn’t have a few of the ingredients, so I just substituted. I didn’t have cream, so I used the cream liqueur, Amarula. And since I was using Amarula, I figured it didn’t also need tequila. I also used brown sugar in place of white sugar. And skipped the lime, because really, lime is just needed because of the tequila. (right?)

And this pie crust… seriously, THE best. But it’s not from Pinterest… it’s my mom’s special recipe. And she’s basically the pie-making master.

But then once it was sliced into, it basically was soup, again. The flavor was pretty great, although Garett would prefer a more “pure peach” flavor. But it was so goopy ย that it would make you all a little nautious to see a picture, so I spared you. Therefore, the search goes on.
I still need that perfect peach pie recipe. Who has one I should try?
